Sausage Making is the backbone of our whole animal butchery program. With both fresh and smoked sausages in our repertoire, we make a variety of sausages every week to complement any flavor profile you desire. Some of our greatest hits include Scarborough Fair, a fresh pork sausage ground with parsley, sage, rosemary and thyme; Spicy Fennel, a sausage version of our popular porchetta roast that includes fennel, garlic, red pepper, herbs and fresh citrus; and the Rockin’ Moroccan Lamb Skewer with dried apricot, honey, cinnamon, turmeric, fresh herbs and onion.
